- 1 lb ground beef
- 1 medium onion, chopped
- 2 cups frozen mixed vegetables (carrots, corn, peas)
- 1 can cream of mushroom soup (10.5 oz)
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1 cup elbow macaroni, uncooked
- 1 cup beef broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 1 teaspoon dried parsley (optional)
Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef along with the chopped onion until the meat is no longer pink. Drain any excess grease.
Stir in the frozen mixed vegetables, cream of mushroom soup, cottage cheese, shredded cheddar cheese, elbow macaroni, beef broth, garlic powder, onion powder, salt, and pepper. Mix everything until well combined.
Pour the mixture into a greased 3-quart casserole dish. Spread it evenly.
Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 15 minutes, or until the macaroni is cooked and the top is lightly browned and bubbly.
Once done, remove from the oven and let it sit for 5 minutes before serving. Sprinkle with dried parsley if desired.
You can customize this casserole by adding any of your favorite vegetables or swapping out the beef for ground turkey or chicken.
For a bit of spice, consider adding some red pepper flakes or diced bell peppers.
