
Chicken Stew

- 1 lb chicken thighs boneless and skinless, cut into chunks
- 2 tablespoon olive oil
- 1 onion chopped
- 2 carrots sliced
- 2 celery stalks chopped
- 3 cloves garlic minced
- 2 tablespoon tomato paste
- 1 teaspoon thyme dried
- 1 teaspoon rosemary dried
- 4 cups chicken broth
- 2 potatoes peeled and diced
- 1 cup frozen peas
- to taste salt and pepper

- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until lightly browned. Remove from pot and set aside.
- Add onions, carrots, and celery to pot. Cook until vegetables soften.
- Add garlic, tomato paste, thyme, and rosemary. Stir and cook for 2 minutes.
- Return chicken to the pot and pour in chicken broth. Stir to combine.
- Add diced potatoes and bring to a boil.
- Reduce heat, cover, and let simmer for 25-30 minutes until potatoes are tender.
- Stir in frozen peas and cook for another 5 minutes.
- Season with salt and pepper to taste. Serve hot.
Notes
For added flavor, try using freshly chopped herbs instead of dried.
