
Baked Feta Eggs Recipe

- 1 tablespoon Olive oil for sautéing
- ½ Onion chopped
- 2 cloves Garlic minced
- 1 cup Cherry tomatoes halved
- ½ teaspoon Red pepper flakes optional
- ½ teaspoon Salt to taste
- ¼ teaspoon Black pepper freshly ground
- 1 block Feta cheese about 200g
- 4 Eggs large
- 2 tablespoon Fresh parsley chopped
- 1 tablespoon Butter for greasing
- ½ teaspoon Paprika
- ¼ teaspoon Cumin
- 1 loaf Crusty bread for serving

- Preheat the oven to 375°F (190°C).
- Grease a medium-sized baking dish with butter.
- Heat olive oil in a pan over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and cook for another minute.
- Add cherry tomatoes, red pepper flakes, salt, black pepper, paprika, and cumin. Cook for 5–7 minutes until softened.
- Transfer tomato mixture into the greased baking dish and stir in the crumbled feta cheese.
- Make small wells in the mixture and crack eggs into each well.
- Bake in the preheated oven for 15–18 minutes, or until the egg whites are set but yolks are still slightly runny.
- Garnish with chopped parsley and serve with crusty bread.
Notes
Use high-quality feta for best flavor. You can also add sautéed spinach or bell peppers for variation.
